As Proof Celebrates 10 Years, Executive Chef Austin Fausett Creates Commemorative 10-Course Dinner, Taking Diners on a Culinary Journey from the Past, Present & Future of the Pioneering Wine Restaurant

Celebrating 10 years is a milestone in the restaurant industry, and Proof is thrilled to commemorate its 10th birthday on Wednesday, July 5. To honor its first decade in business, Proof will host an unforgettable 10-course “Past, Present & Future” culinary journey from Executive Chef Austin Fausett and a wine-filled after-party for friends, family and supporters of the restaurant to celebrate with bubbles, hors d’oeuvres and good company.

To kick off the anniversary evening, Proof will host a special 10-course dinner (one seating, limited reservations available from 6-7 p.m.) which takes diners on a culinary journey, paying a visit to the restaurant’s beginnings, showcasing how it has evolved to today, and looking to where Proof is headed toward the future. Old favorites such as Miso Black Cod will make a comeback, while current creations like Pekin Duck and Bone Marrow & Foie Gras make an appearance, and finally, Fausett will showcase experimental dishes he would love to see on Proof’s menu in the future, such as Maine Lobster with Oxtail Tortello and a new spin on the popular Tuna Tartare.

Chef Fausett has created a decadent, one-night-only menu featuring luxe ingredients such as Royal Ossetra caviar, A5 Kobe beef, foie gras and Maine lobster, while still maintaining the restaurant’s Modern American focus and dedication to local purveyors.

The 10-course dinner menu ($150/person) can be found below:

    Malt vinegar aioli, potato croquettes
  2. “Dueling” Tuna Tartar
    Avocado,  nori vs dashi,  yuzu
  3. Miso Black Cod
    Dashi braised shiitakes, garlic scapes
  4. Maine Lobster with Oxtail Tortello
    Tarragon Riesling sauce
  5. Bone Marrow & Foie Gras
    Plum, rhubarb, parsley salad
  6. A5 Kobe Beef
    Kimchee cracklings, beef pho consommé, egg ribbons
  7. Pekin Duck
    Raspberry, rhubarb, roma beans, wild rice
  8. Jasper Hills Willoughby and Pipe Dreams Bouche Ash
    Really Raw honey, cashews, macerated apricots
  9. Raspberry Meringue
    Lychee coconut sorbet
  10. Sticky Toffee Pudding
    Almond graham, vanilla ice cream

And Proof’s new Wine Director Ben Kuna has pulled some rarities from the restaurant’s 5000-bottle wine cellar for the evening, with optional wine pairings available ($120/person) including tastes of Roederer Cristal 2007 and Les Cailloux “Cuvee Centenaire” Chateauneuf-du-Pape 2007, both commemorating Proof’s birth year, and other surprises.

Following the dinner, from 10pm-1am, Proof will celebrate with an anniversary after-party ($35/person), featuring unlimited bubbles, wines, punch, beer, hors d’oeuvres and other festive surprises.
