Two years into the effects of the Global Pandemic, our local restaurant community is still rebuilding in many ways. Operators tell us that they continue to employ between 75-80% of the number of staff they employed pre-Pandemic, and many are unsure they will ever staff back up to those levels as they, and their teams, have learned to work in different ways to be effective.
